How To Make Bengali-Style Chorchori | Chorchori (Bengali-Style Mix Veg) Recipe:
In this particular chorchori recipe, we include vegetables like potato, brinjal, cauliflower and pumpkin. The recipe also includes ginger, garlic, panchphoron, green chilli, bay leaf, coriander leaves, jeera-dhania powder, salt and sugar. Always remember, use mustard oil for this recipe to add that extra zing to chorchori.
All you need to do now is heat mustard oil and add pounded ginger-garlic-green chilli, bay leaf and panchphoron to it. Sauté for a while and add the potatoes. Once the potatoes are half fried add cauliflower and salt to the kadhai and close the lid for a few minutes. Now, add rest of the spices and vegetables to it and mix well till every vegetable piece is well coated with the masala. Close the lid and let the sabzi cook again for a few minutes. Once you get the desired consistency and texture, switch off the flame and transfer the chorchori to a bowl. You may garnish the dish with a spoon of ghee.
